Curried Veggie Burgers

Homemade, good quality, interesting burgers are now a widely embraced addition to staple family meals.

I never tire of experimenting with different ingredients and flavours in order to come up with healthy - but always satisfying - variations. Try this delectable vegetarian patty jammed in a salad filled bun for a quick weekday dinner!



Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 10 burgers

Ingredients
2 tbsp coconut oil/ olive oil
1 onion, finely chopped
1 tsp garlic, crushed
2 zucchinis, grated
1 large carrot, grated
1 cup oats
400g can chickpeas, rinsed and drained
3 tsp mild curry paste
6 tbsp peanuts
1 tbsp chia (mixed with 3 tbsp water)
3 tbsp coriander leaves, chopped

Method
  • Combine the garlic, grated zucchini, carrot and chia seeds in a bowl and mix well.

  • In a food processor, blitz the onion, oats, chickpeas, peanuts, curry paste and coriander until a crumbly and uniform mixture has formed.


  • Transfer the blended ingredients to the bowl with the carrot/ zucchini mix, and using hands, combine thoroughly.

  • Separate into 10 round balls and flatten into a patty shape of desired thickness and size.

  • Heat the coconut/ olive oil over a medium flame and cook the burgers in matches for 3-5 minutes each side, or until golden and crispy.

  • Serve either singly with a side of salad, or jam in a bun packed with fresh vegetable slices and a sauce or relish if desired.
