Custard Pancakes

custard pancakes

Give your scotch pancakes a twist by adding a pit of custard powder to the batter.

Preparation Time: 35 minutes
Cooking Time: <1 minute each
Serves: 6

100g plain white flour
50g custard powder
125ml almond milk
1 tsp baking powder
1 egg
1 tsp coconut oil
1 tsp Truvia sweetener (or 25g caster sugar)

Beat all the ingredients together until you have smooth batter.
Let the batter rest for half an hour, until bubbling slightly.

Melt coconut oil in a frying pan and then pour a small amount of batter in.
Quickly tilt the pan so that the batter spreads into a small round before setting.
Once bubbles appear on the surface, flip it over and heat for ten to thirty seconds before removing from the heat.

Repeat until all the batter is used up; it should make six.
