Custard Pancakes

Give your scotch pancakes a twist by adding a pit of custard powder to the batter.

Preparation Time: 35 minutes
Cooking Time: <1 minute each
Serves: 6

Ingredients
100g plain white flour
50g custard powder
125ml almond milk
1 tsp baking powder
1 egg
1 tsp coconut oil
1 tsp Truvia sweetener (or 25g caster sugar)

Method
  • Beat all the ingredients together until you have smooth batter.
  • Let the batter rest for half an hour, until bubbling slightly.

  • Melt coconut oil in a frying pan and then pour a small amount of batter in.
  • Quickly tilt the pan so that the batter spreads into a small round before setting.
  • Once bubbles appear on the surface, flip it over and heat for ten to thirty seconds before removing from the heat.

  • Repeat until all the batter is used up; it should make six.
