Dads Mini Apple Pies
This is an apple pie recipe that my dad has always made. The filling can be changed but the pastry cannot, it is the best bit. He used to end up making double the pastry as I would eat it all before it made it to the pie dish.
I have made mini pies as I don't have a pie dish. This recipe makes one family sized pie or 12 mini pies.
Perfect bite sized pies.
The pastry measurements are in "old money" as that's how Dad does it.
Preparation Time: 15 minutes
Cooking Time: 55 minutes
Makes: 1 large pie or 12 mini pies
Ingredients
Pastry:
4oz butter
3oz sugar
1 egg
8 oz self raising flour
Stewed Apples:
65g butter
4 large tart apples
2 teaspoons cornflour
1/2 cup cold water
1/2 cup brown sugar
1/2 teaspoon cinnamon
1 vanilla bean
Method
Stewed Apples
In a saucepan, melt the butter over a medium heat then add the peeled, cored and diced apples. Cook, stirring, until the apples are almost tender, about 6 to 7 minutes.
Mix the cornflour in the water and add to the pot. Stir in the brown sugar, vanilla and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from the heat.
Pastry
Cream the butter & sugar then add the egg.
Stir in the flour and knead gently until it comes together. Place in the fridge until the stewed apples are ready.
Put half the pastry into the bottom of your muffin tray sections or pie dish. Fill with stewed apples and top with the rest of short pastry . Fork a few holes into each pie.
Bake in a 170C oven for 35 minutes on until nicely browned.
Let the pies sit in the tray for 5 minutes then move to a wire tray to cool.
Serve hot or cold with a dollop of cream or on its own!
Try this pie with stewed apricots,
stewed rhubarb or whatever fruit is in season.
