Dairy Free Chocolate Chunk Biscuits with Cranberries
For those of you who are lactose intolerant, this is a great recipe for biscuits. I have used ordinary dark chocolate however you can use dairy free chocolate as this also works well.
Packed with choc bits and dried cranberries, they are just right to stave off those hunger pangs in between meals.
Preparation Time: 20 minutes plus 45 minutes fridge time
Cooking Time: 12 minutes
Makes: About 36 biscuits
Ingredients
¾ cup vegetable oil
1 cup coconut sugar (or brown sugar)
¼ cup sugar
2 eggs
vanilla
1¾ cups plain flour
1 tsp baking powder
1¼ cups chocolate bits
1 cup dried cranberries
Method
Beat the oil, sugars, eggs and vanilla till they are light in colour.
Add the flour and baking powder, and mix lightly until just blended.
Add the chocolate chips and the dried cranberries.
Cover and put in the fridge for 45 minutes.
The dough will be firmer after this
As you take the dough out of the fridge, preheat the oven to 155° fan forced and line two baking trays with baking paper.
Fill each baking tray with spoonfuls of the mixture, ensuring they are not too close as they spread whilst cooking.
Bake for about 12 - 14 minutes or until golden brown.
Allow to cool and serve.
