Dairy Free Coconut Chai Parfaits With Mango Cream
I am always on the lookout for a dessert that does not have added sugar, and this one has just a bit of raw honey added.
There is no cooking involved, it can be made a day or two ahead, and it is dairy free.
Preparation Time: 15 minutes plus 5 hours setting time
Cooking Time: 0 minutes
Serves: 5
Ingredients
For the chia pudding
½ cup chia seeds (I used white, but black is also OK)
1½ cups coconut cream
1 cup water
1 tsp vanilla
1 tbsp raw honey
Small handful blueberries (optional)
For the Mango Cream
2/3 cup chia pudding
1 mango
2 tbsp coconut cream
Method
Mix the coconut cream, water, vanilla and honey until it is combined.
Pour half of it over the chia seeds, and stir.
When it is well mixed, add the rest of the mixture, and stir again until combined.
Add the blueberries if using - you could substitute strawberries if you prefer.
Put this in the fridge for at least 5 hours or overnight.
For the mango cream
When the pudding is set, take out 2/3 of a cup from it and put this in a blender.
Add the diced mango pieces, coconut cream, and blend until it is smooth.
To assemble the parfaits, put a bit of the chia pudding in a glass or individual bowl, add some of the mango cream.
Add another layer of the chia pudding so that there is a distinct line when viewing it sideways.
Top it with some coconut slivers.
You can also garnish with extra mango, and/or nuts.
Serve at once or put in the fridge and it will keep for at least 4 days.
