Everyone knows and loves potato salad, but I've always found it too creamy and slimy, so I made a healthier, vegan version that works without the dairy.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 servings
Ingredients
10 baby new potatoes
10ml olive oil
Pinch of salt
2 kale leaves
Sprig of fresh thyme
Sprig of fresh rosemary
Method
Prick the potatoes with a fork, add the seasoning and drizzle with the oil. Place in the oven at 200 degrees for 20 minutes.
Tear the spinach and kale roughly and add to a bowl.
Remove the potatoes from the oven and add to the bowl.
Add the salt, thyme, rosemary and oil to the bowl a day toss.
