Dairy Free Shortbread
I used to love eating shortbread but as it is full of butter I have steered clear of it for some time, until now. Making dairy free shortbread is so simple i can't believe i didn't try it sooner. Give this recipe a go and show someone that is lactose intolerant or vegan that they can still enjoy this
buttery treat.
I have left these plain but the biscuits can be dipped in chocolate or spread with jam and sandwiched together.
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 20 cookies
Ingredients
200g dairy-free butter
1 tsp vanilla paste
100g cup caster sugar
300g cups plain flour
Method
Cream the butter, vanilla and sugar together until fluffy. Sift in the flour and mix into a dough.
Cover the bowl with a clean tea towel and chill in the fridge for at least 30 minutes.
While the dough is firming up preheat the oven to 160c and line a baking tray with baking paper.
Once the dough is chilled, roll out to approximately ½ cm thickness and cut into shapes with a cookie cutter or simply slice into long strips.
Place the cut out dough on the baking tray and sprinkle with a little sugar.
Bake for 12-15 minutes until golden brown at the edges, turn the tray half way through to ensure even baking.
Leave to cool for at least 10 minutes before serving or decorating us suggested above.
