Dairy Free Shortbread

I used to love eating shortbread but as it is full of butter I have steered clear of it for some time, until now. Making dairy free shortbread is so simple i can't believe i didn't try it sooner. Give this recipe a go and show someone that is lactose intolerant or vegan that they can still enjoy this buttery treat.

I have left these plain but the biscuits can be dipped in chocolate or spread with jam and sandwiched together.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 20 cookies

Ingredients
200g dairy-free butter
1 tsp vanilla paste
100g cup caster sugar
300g cups plain flour

Method
  • Cream the butter, vanilla and sugar together until fluffy. Sift in the flour and mix into a dough.
  • Cover the bowl with a clean tea towel and chill in the fridge for at least 30 minutes.

  • While the dough is firming up preheat the oven to 160c and line a baking tray with baking paper.
  • Once the dough is chilled, roll out to approximately ½ cm thickness and cut into shapes with a cookie cutter or simply slice into long strips.

  • Place the cut out dough on the baking tray and sprinkle with a little sugar.
  • Bake for 12-15 minutes until golden brown at the edges, turn the tray half way through to ensure even baking.
  • Leave to cool for at least 10 minutes before serving or decorating us suggested above.
