Dairyfree Tomato and Basil Soup

Creamy tomato soup, is well, creamy, and delicious. But having given up dairy I decided that I'd try my hand at tomato soup, sans-cream. The result? A fresh, balsamic, tomato soup.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 3 servings

Ingredients
Kilo of varied tomatoes
5 fresh basil leaves
5 garlic cloves
Sprig of fresh thyme
Tsp ground black pepper
Pinch of sea salt

Extra seasoning:
Tsp curry powder
Pinch of sea salt

Method
  • Chop the tomatoes and add to a baking tray along with all of the ingredients and drizzle with olive oil.



  • Cook in the oven for 30 minutes at 150 degrees.



  • Place all of the baking tray ingredients into a blender with a pint of water and extra seasoning.



  • Blitz on high until smooth.

  • Pour into suitable bowls/jars for storage and enjoy.
