Creamy tomato soup, is well, creamy, and delicious. But having given up dairy I decided that I'd try my hand at tomato soup, sans-cream. The result? A fresh, balsamic, tomato soup.
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 3 servings
Ingredients
Kilo of varied tomatoes
5 fresh basil leaves
5 garlic cloves
Sprig of fresh thyme
Tsp ground black pepper
Pinch of sea salt
Extra seasoning:
Tsp curry powder
Pinch of sea salt
Method
Chop the tomatoes and add to a baking tray along with all of the ingredients and drizzle with olive oil.
Cook in the oven for 30 minutes at 150 degrees.
Place all of the baking tray ingredients into a blender with a pint of water and extra seasoning.
Blitz on high until smooth.
Pour into suitable bowls/jars for storage and enjoy.
