Dark Chocolate Beetroot Cake

A little trick to get more veges into your kids/husband/self.
Not only is it super moist and pretty darn easy, it's virtually impossible to tell the difference between it and a plain old awesome choc cake!

Uniced Dark Chocolate Beetroot Cake

Preparation Time: 15 minutes
Cooking Time: 45-55 mins
Makes: 22cm round cake

200g dark chocolate (above 60% cocoa solids)
125ml rice bran oil
150g brown sugar
3 large free range eggs
1tsp vanilla extract
100g flour
85g ground almonds
1T dark cocoa
1 1/2t baking powder
1/2t baking soda
220g raw beetroot

Preheat oven to 180C (160 fan bake)
Grease and line a 22cm diameter cake tin

Gently melt the chocolate in a bowl over a pot of simmering water. Set aside to cool once melted.

Place oil, sugar and eggs in a large mixing bowl and using an electric hand mixer, whisk for 3-4 minutes, or until pale and creamy. Stir in vanilla.

Sieve in dry ingredients and gently fold through.

Grate beetroot -or place in food processor to shred. Squeeze out a little of the excess moisture and then add to chocolate.

Thoroughly fold the chocolate & beetroot through the rest of the cake mixture, making sure it is all well incorporated and pour into prepared cake tin.

Bake for 45-55 minutes, until skewer comes out clean. Leave to cool in tin for 10 minutes before turning out onto cooling rack.

Serve dusted with icing sugar, or covered in ganache or buttercream icing, for a special occasion
