Dark Chocolate Fudge Cookies

A scrumptious chocolatey treat that packs a punch. Pop these into a cookie jar for a chocolate snack with a cup of tea.



Preparation Time: 15 minutes
Cooking Time: 12 minutes
Makes: 18 servings

Ingredients
1 1/2 cups plain flour
3/4 cup cocoa powder
1 1/2 cups brown sugar
180g butter, chopped
300g dark chocolate, chopped
3 eggs, lightly whisked

Method
  • Preheat the oven to 180 C. Line or lightly grease some baking trays.

  • Combine the flour, cocoa powder, and brown sugar in a mixing bowl.



  • In a second (heatproof) mixing bowl over a saucepan of simmering water, place half of the dark chocolate and the butter. Make sure that the bottom of the bowl doesn't touch the water.

  • Stir the chocolate and butter over a low heat until the mixture melts and is smooth.



  • Remove the chocolate mixture from the heat and set aside to cool slightly.

  • Add the egg and the chocolate mixture to the dry ingredients.



  • Stir until the mixture is evenly combined.



  • Fold through the remaining dark chocolate.



  • Roll 1 tablespoon of mixture at a time into small balls. Place these on a the baking trays.



  • Bake for 10-12 minutes, or until cooked through.



  • Allow the cookies to cool on their baking trays for about 5 minutes before moving them to a wire rack to cool.
