Dark Chocolate Sweet Potato Brownies
These brownies are dark but far from devilish. Filled with sweet potato, cocoa, olive oil and eggs these brownies are protein filled and paleo. I personally don't buy into the paleo craze but love sweet potato and chocolate so these are a win!
For the dark chocolate lover.
Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 18 servings
Ingredients
1 medium sweet potato (2.5 C grated)
1/2 C olive oil
1/2 C honey
1 C cocoa
2 eggs
1/2 TSP cinnamon
1/2 TSP baking soda
1 TSP baking powder
2 TBSP wholemeal OR coconut flour (for gluten free)
1 TBSP vanilla essence
Nutritious ingredients.
Method
Peel and grate the sweet potato.
Good arm workout
Combine the sweet potato in a bowl with the eggs, honey, oil and vanilla essence.
Next stir in the baking powder, baking soda, cinnamon and cocoa. Combine well.
This may look delicious but please refrain from licking to bowl Raw sweet potato is not so sweet.
Lastly stir in the flour.
Pour mixture into a well greased baking tray and smooth out.
Bake at 185° for 40 mins, check after 30 mins.
Remove and allow to cool before cutting into squares.
NOTE: These are very dark brownies and quite bitter, those inclined to sweeter chocolate should use 1/4 C of cocoa and 3/4 C sweetened hot chocolate powder. For me the bitterness is perfect and i'm satisfied after one, for those that love 85% chocolate.
