Dates and walnuts are a classic combination, making a cake that is soft and squidgy, but with a bit of a nutty crunch. A slice of this loaf can be enjoyed on its own or with a spread of butter.

Ingredients
225g pitted dates
225g self-raising white flour
100g margarine
100g Demerara (brown) sugar
50g walnut halves
300ml boiling water
1tsp bicarbonate of soda
1 egg
Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Soak dates in boiling water, add bicarbonate of soda, and leave to cool.
Mix together flour. margarine, sugar, and walnuts.
Add date mixture and beat in egg.
Bake in a 2L loaf tin for about 1 hour and 10 minutes. Poke a skewer inside to see if it comes out clean. If it has mixture on it, cook for a little longer.
Remove from tin and allow to cool before slicing.
