Date Biscuits
These date biscuits were one of the very first things I made when I got into baking. At the time I did not know where all the baking utensils in the kitchen were, and could not find the cookie cutter. I therefore used a substitute in the form of a washing powder tablespoon, which meant I ended up with lots of delicious bite-sized biscuits crammed full of dates. You can of course use a regular sized cookie cutter if you like, and make half the amount, but I quite like these tiny morsels the way they are. Since I used soya ingredients, and no eggs, these are a yummy treat for vegans. Based on the brands I used, each biscuit is about 64 calories.
Preparation Time: 25 minutes
Cooking Time: 15 minutes
Makes: 30 servings
Ingredients
200g plain flour
100g soya butter
100g Xylitol sweetener (or caster sugar if your prefer)
175g pitted dates
3 tbsp light soya milk
Method
Pre-heat the oven to 190 & #3872 ;C/ 170 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
Mix the flour and sweetener/sugar together.
Rub in the butter to create a breadcrumb like texture.
Chop the dates and add to the mixture.
Add the milk to form a dough.
Roll out the pastry and using a small cookie cutter, cut out the biscuits.
Bake in the oven.
