Date Fig and Prune Bread
A intensely fruity flavoured bread it is full of large chunks of fruit, and delicious with jam.
Preparation Time: 2 hours
Cooking Time: 40 minutes
Makes: 1 loaf
Ingredients
600g wholemeal bread flour
½ tsp salt
7g fast action yeast
1 tbsp agave nectar
180g pitted prunes
155g pitted dates
140g dried figs
60g pecans
450ml water
Method
Mix together 500g flour, salt, yeast, agave nectar, and pecans.
Add 100g prunes, dates, and figs, and blend the mixture in a food processor.
Gradually add the water to create a wet dough.
Knead the dough for five minutes by incorporating the remaining flour.
Add the remaining fruit in whole, and continue to knead for another five minutes.
Prove the dough for about an hour.
Score the dough and sprinkle a pinch of flour over the top.
Bake in the oven.
