Date Fig and Prune Bread

A intensely fruity flavoured bread it is full of large chunks of fruit, and delicious with jam.

Preparation Time: 2 hours
Cooking Time: 40 minutes
Makes: 1 loaf

Ingredients
600g wholemeal bread flour
½ tsp salt
7g fast action yeast
1 tbsp agave nectar
180g pitted prunes
155g pitted dates
140g dried figs
60g pecans
450ml water

Method



  • Mix together 500g flour, salt, yeast, agave nectar, and pecans.
  • Add 100g prunes, dates, and figs, and blend the mixture in a food processor.
  • Gradually add the water to create a wet dough.



  • Knead the dough for five minutes by incorporating the remaining flour.
  • Add the remaining fruit in whole, and continue to knead for another five minutes.



  • Prove the dough for about an hour.
  • Pre-heat the oven to 220 & #3872 ;C/ 200 & #3872 ;C fan/400 & #3872 ;F/6 G



  • Score the dough and sprinkle a pinch of flour over the top.



  • Bake in the oven.
