Date Rolls
It is strange how pricey date rolls are at the local supermarket, considering how few ingredients they contain and how simple they are to make.
Making them at home is worlds cheaper - but I also find it preferable as I can add the dried fruit, nuts and spices that I prefer.
These date rolls are a superb snack for anyone on the go. They give you a boost of energy but at the same time only contain quality whole food ingredients.
Preparation Time: 10 minutes
Makes: 3 servings
Ingredients
1/4 cup of pitted dates
6 - 8 walnuts
1/8 cup of desiccated coconut (for making rolls)
1 tsp of desiccated coconut (for coating)
1/2 tsp of ground ginger
1/2 tsp powdered cinnamon
Method
Check dates for any stray pits, then roughly chop.
Add the large portion of desiccated coconut to the dates and begin kneading the mixture together
Crush the walnuts - keeping in mind that small to medium pieces will work into the mixture better than large chunks.
Further knead the mixture until the coconut and walnuts are fully incorporated into the dates and there are no more large chunks of date present.
Separate the mixture into 4 - 6 rolls
Lay out the individual portions of desiccated coconut, ground ginger and powdered cinnamon for coating.
Dust each roll in a coating of your choice - or a mixture of all three.
If you would like a very firm end result, place rolls in an airtight container and into the fridge for at least half an hour.
Serve rolls as a handy snack or a healthy accompaniment to your mid-morning tea or coffee.
