Date Slice
This is a filling, relatively healthy slice that’s great for both school lunchboxes and serving with coffee. It freezes well, so you can always have a supply on hand.
Preparation Time: 10 minutes, plus 10 minutes cooling time
Cooking Time: 30 minutes
Makes: 20 servings
Ingredients
175g butter, melted
1 cup brown sugar
2 cups rolled oats
2 cups plain flour
1 tsp baking soda
Pinch salt
Date Filling
500g pitted dates, chopped
¼ cup white sugar
½ cup water
1 tsp vanilla
Method
For the date filling, place dates, sugar and water into a medium saucepan and cook, stirring often, over a medium heat until almost all the water has been absorbed. Remove from heat, stir in vanilla and set aside to cool.
Cook until the mixure is soft and mushy
Mix the butter, brown sugar, oats, flour, baking soda and salt together in a large bowl until well combined.
Press half of this mixture into the base of a greased 20x30cm slice tin. Spread with cooled date filling and top with remaining mixture.
Use half of the oat mixture for the base of the slice, saving the remainder for the top
Bake in a moderately slow (150°C fan forced) oven for about 30 minutes or until golden brown on top. Remove from oven, allow to cool and cut into squares.
