Deconstructed Orange Rhubarb Fool

A fruit fool is a classic British summer time dessert. A gooseberry fool is the most common, but other fruits are also used. This one has orange and rhubarb, and is really a deconstructed fool because it is layered rather than mixed together. Just as delicious though. Based on the brands I used, each dessert is about 121 calories each.

Preparation Time: 30 minutes
Cooking Time: 10 minutes
Makes: 6 servings

Ingredients



2 tins of rhubarb
1 orange
2 tbsp clear wildflower honey
1 tsp vanilla extract
350g natural yoghurt
50g golden icing sugar

Method

  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.



  • Zest and juice the orange.



  • Mix the orange juice with honey and vanilla essence.



  • Drain the rhubarb, then put it in a roasting tin and drizzle the juice mixture over the top.



  • Bake in the oven, the use a spoon to mush it down.



  • Mix the yoghurt, icing sugar and orange zest together.



  • Divide the rhubarb into six glasses, then spoon the yoghurt mix on top.
