Deconstructed Strawberry Cheesecake

Deconstructed Strawberry Cheesecake

I've never been very good at taking things out of tart dishes; if you also struggle to remove your desserts without them falling to pieces on transit to your bowl, then this deconstructed strawberry cheesecake it just for you. By layering the ingredients in individual glasses, it saves on slicing or transferring. It also makes the deconstruction intentional rather than accidental, an elegant way to serve dessert to your guests at a dinner party. Based on the brands I used, each cheesecake is about 283 calories.

Preparation Time: 30 minutes
Cooking Time: N/A
Makes: 8 servings

Ingredients
400g strawberries
1 x 397g Carnation Light Condensed Milk
200g light soft cheese
200g homemade muesli
150g natural yoghurt
4 tbsp lemon juice
3 tbsp clear wildflower honey

Method

  • Blend the muesli and one tablespoon of honey in a food processor.

  • Divide the mixture into eight glasses or serving bowls.

  • Beat the soft cheese, condensed milk, yoghurt, and lemon juice together.

  • Divide the mixture and pour it on top of the muesli base.

  • Puree the strawberries with two tablespoons of honey.

  • Divide the mixture and pour it on top of the cheesecake.
