Deep Fried Rice Bread
This rice bread is gluten free and delicious. This can be served as snacks or breakfast with tomato gravy or chicken curry.
My husband introduced me to this dish. The bread is crisp on the outside and chewy on the inside.
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 5 servings
Ingredients
1 cup rice flour
1/2 cup grated coconut
1 small onion
1.5 cup water
2 tsp cumin seed
Salt to taste
Oil for frying
Method
Chop the onion into small pieces.
Dry fry the rice flour on medium heat with continuous stirring. The colour of the flour must remain white even after frying. If it is over fried, the colour will change to brown.
Boil water in a pan. Add salt to taste. When water starts to boil, reduce the flame to low. Add the fried flour a little at a time with continuous stirring to avoid lumps.
After adding the flour, remove from heat. Now add the grated coconut, chopped onion and cumin seeds. Mix well with a spoon. Let it sit for 3 minutes.
Transfer the dough mix to a flat oily surface. Knead to form a soft dough.
Roll the dough to form a thick flat bread. Cut into any shape using a cookie cutter or use a mould.
Heat oil in a pan. Deep fry the bread until both sides are golden brown.
Then transfer to a tissue paper to remove excess oil.
Serve hot with curry.
