DeepFried Sweet Potato Balls
A delicious snack of deep-fried sweet potato balls with a soft center with crispy skin.

Cooking Time: 30 minutes
Makes: 40 balls
Ingredients
450g sweet potato, peeled
250g glutinuous rice flour
30g corn flour
100g sugar
1/4 tsp salt
Method
Cook the sweet potato in a pot of boiling water until soft.
Transfer the cooked sweet potato to a mixing bowl. Mash with a fork.
Mix in the rest of the ingredients. Knead with hands until the mixture is smooth and well combined.
Roll the dough into bite-sized balls.
Heat oil in a deep fryer. Fry the sweet potato balls in batches until golden brown and crispy. Transfer to paper towel to drain excess oil. Serve warm.
