This chicken noodle soup is truly a soup for the soul. Easy to prepare, totally delicious and a meal in itself.
Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 4-6 servings
Ingredients
500g Chicken thigh fillets
3 Celery sticks, chopped into large pieces
2 Carrots, chopped into large pieces
1 Onion, cut into quarters
4 Chicken stock stock cubes
Egg noodles
Salt & pepper
Method
Place 1.5 litres of water, chicken stock cubes, chicken fillets, celery, carrots and onion into a large pot and bring to boil. Season with salt and pepper.
Boil for 30 minutes or until chicken is very tender
Remove chicken from pot and cut into small pieces
Using stick blender, puree vegetables until smooth
Place chicken back in the pot and add a cup of noodles
Cook for 12-15 minutes or until noodles are cooked.
Serve as an entree or main meal. Delicious with garlic bread or fresh rolls.
