Devilled Egg Prawn Bake
People have been eating devilled eggs since Roman times, but it was not until the eighteenth century that the term 'devilled' entered the cuisine lexicon.
Although named to represent the heat of hell, devilled eggs are usually only mildly spiced, and just add an extra bit of flavour, rather than extreme heat. This dish is topped off with a bit of cheese, and based on the brands I used, each portion is about 297 calories.

Makes: 4 servings
Ingredients
6 eggs
300g cooked peeled prawns (use a mix of small and king sized)
25g butter
25g wholemeal flour
40g Cheddar
40g red Leicester
1 tbsp mixed herbs
1 tsp paprika
ΒΌ tsp curry powder
300ml coconut milk
Method
Hard boil the eggs by simmering them in a saucepan of boiling water for about five minutes.
Blanch the eggs in cold water, then peel off the shells and slice.
Melt the butter in a sauce pan, then stir in half the flour.
Gradually stir in the milk and remaining flour, until the sauce has thickened.
Stir in the herbs and spices.
Mix the prawns and eggs together in an oven dish, and then stir in the sauce.
Grate the cheese and sprinkle over the top.
Bake for twenty minutes.
