Devilled Eggs

Are devilled eggs something you remember from your past but just don't think to make anymore? These days devilled eggs are thought of as retro, but I bet they're still the favourite at most parties.

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 12

Ingredients
6 large eggs, hard boiled
2 - 3 tbs mayonnaise
1-2 tsp dijon mustard
salt and pepper, to season
paprika, for garnishing

Method
  • Peel the hard boiled eggs and slice them in half lengthways.
  • Using a teaspoon, carefully remove the egg yolks and place them into a bowl. Place the egg whites cut side up.

  • Use a fork to mash the egg yolks until they are completely crumbled. Mix in the mayonnaise and mustard to form a smooth paste. Season with salt and pepper.

  • Use a spoon to transfer the filling back into the cup of the egg whites. The filling should make little mounds on top of the egg white.
  • Sprinkle with paprika to serve.

  • If you wanted to make your devilled eggs look fancier, you could use a piping bag to pipe the filling into the egg white cups.
