We all know it's best to start the day in a healthy way, but sometimes it's a challenge to find the right muesli with everyone's favorite fruit and nuts. We fix this problem by making our own. It takes a little effort but is definitely worth it. That way we know exactly where each ingredient has come from and there are no hidden nasties.

Try and source organic ingredients where possible and this will put the best fuel in your "tank" for the day. This recipe lasts our family of four (two adults and two children) for breakfast each morning for about a week. Of course, you can experiment with the best ingredients that work for you and yours (try different nuts and dried fruits perhaps).

Toasting oats


Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: 1 Large jar of muesli

Dried fruit


Ingredients
2 cups rolled oats
1 cup dessicated coconut
1 cup sultanas and/or cranberries/ goji berries/currants
1/2 cup almond meal
1/2 cup dried apricots and/or dates
1 cup assorted nuts/seeds

Method
  • Toast the rolled oats in the oven on low heat for 10 minutes, until slightly browned. Cool and place in a large jar.
  • Add the dessicated coconut, sultanas/currants/goji berries/cranberries, almond meal, apricots, dates, nuts/seeds (for this recipe we used pecans, brazil nuts, sunflower seeds, walnuts, and chia seeds). Stir until all ingredients are well combined.
  • Serve hot or cold, with milk, fresh fruit salad and yogurt. Happy muesli eating - enjoy.
