Double Choc Chip Cookies With Strawberry Filling
Simple, delicious and fun. Chocolate and strawberries are a perfect match in these tasty cookies. They are easy to make and make a great snack with choc chips and a delicious strawberry filling. They can be made gluten, lactose and egg free, so no one misses out.

Cooking Time: 10 - 15 minutes
Serves: 16 cookies (8 strawberry filled cookies)
Ingredients
For the choc chip cookies
1 egg, beaten (see

2 tbsp oil (or coconut oil)
1/3 cup maple syrup
1 tbsp vanilla extract
1 1/4 cups flour (or gluten free flour or rice flour)
3 tbsp cocoa (or cacao)
1/4 tsp salt
1/4 tsp bicarb soda
1/3 cup choc chips (or cacao chips)
For the strawberry filling
1 1/2 cups strawberries (fresh or frozen)
3 tbsp raw sugar
1 tbsp fresh lemon juice (optional)
2 tbsp water
Method
Whisk the flour, cocoa, baking powder, salt in a bowl to combine. Add the choc chips and stir to combine.
Beat the eggs, oil, maple syrup and vanilla essence in a bowl. Pour into the flour mixture, stir to combine.
Place teaspoon sized balls of dough on the baking tray. Flatten slightly.
Bake for 10 - 15 minutes. 10 minutes for soft and 15 minutes for harder cookies.

Cool the cookies on the tray for 10 minutes before cooling on a wire rack completely.
While the cookies are baking, bring the strawberries, sugar, lemon juice and water to a boil in a saucepan. Cover and simmer for 7 - 8 minutes until the strawberries thicken and the fluid reduces.
Use a fork to mash the strawberries. Strain the seeds and return the strawberry filling to a medium heat for 2 minutes. Set aside to cool completely.

Turn half of the cookies upside down and spoon strawberry filling on the surface. Place a cookie on the top of the strawberry filling.
Serve.

Tips
Substitute egg with egg replaced or 1/2 cup mashed banana for a vegan alternative.
These taste great with a raspberry filling. Substitute the strawberries with raspberries and exclude the lemon juice.
Use 1/2 milk and 1/2 white choc chips.
