To make use of dried herbs I like to grind them together to make a rub for meat and vegetables. I've turned old rosemary sprigs into a key element in this fragrant, herby seasoning.

Ingredients
2 Old Rosemary Sprigs
3 Bay Leaves
5 Thyme Leaves

Method
Place the rosemary in the mortar and grind down using the pestle.
Add the thyme leaves to the mortar and repeat previous step.
Pour the ground thyme and rosemary into a tub.
Add the bay leaves to the mortar and grind down - it is more difficult with leaves, but stay patient. They break up as opposed to grind to a dust.
Add the broken up bay leaves to the tub of herbs.
Transfer the herbs to an airtight jar and seal.
Store the herbs in the cupboard, as you would with regular dried herbs. They will last up to three months.
