Dukkah Chicken Balls & Fattoush Salad

Wake up your everyday meatball recipe with this Middle Eastern inspired dish. The dukkah and spices add another layer to the chicken mince, while the fattoush salad provides a fresh and tangy zing.

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Makes: 4 servings

1 pita bread
500g chicken mince
1 brown onion, minced or grated
3 tsp ground coriander
3 tsp ground cumin
90 g dukkah (fresh or packaged)
2 tbsp olive oil

1/2 cos lettuce, shredded
3 tomatoes, diced
2 Lebanese cucumbers, diced
1/2 capsicum, diced
1 cup parsley
1 cup mint leaves
1/4 cup extra virgin olive oil
2 tbsp lemon juice

Preheat oven to 200C.

Place pita bread in microwave on high power for 1 minute, or until slightly hard. Break into pieces and allow to cool.

In a large bowl combine the lettuce, tomatoes, cucumbers, capsicum, parsley and mint, and drizzle the lemon juice and oil over the top. Place aside.

In another bowl add the onion, cumin and coriander to the chicken mince and mix well.

Roll the mixture into meatball sized balls and roll in the dukkah. They should be coated evenly.

Heat the oil over a medium heat in a large frying pan. When hot, add chicken balls until browned, shaking pan to cook evenly.

Remove from the pan and place on a lined baking tray and put in oven. Bake for 10 mins or until the balls are cooked through.

Add pita pieces to the fattoush just before serving. Place the chicken balls with a healthy portion of the salad.

loved this! really easy to prepare and just added some chillis as a garnish, really good
