Easter Cheese Bread

Easter cheese bread is a traditional Italian bread that you bake in a flower pot. Although originating in Italy, you do not necessarily have to use all Italian cheeses. In this recipe, I have mixed Parmesan (Italy) with Gruyère (Switzerland), and Morbier (France) to make a loaf that is delicious on its own, but also works extremely well with soup or as a sandwich.

Preparation Time: 1 hour 30 minutes
Cooking Time: 45 minutes
Makes: 1 large loaf

Ingredients
500g wholemeal bread flour
8 eggs
170g margarine
½ tsp salt
7g fast action yeast
60g Parmesan cheese
100g Gruyère cheese
140g Morbier cheese

Method

  • Separate 4 eggs and beat into the 4 whole eggs.

  • Grate the Parmesan and Gruyère, and chop the Morbier.

  • Mix the flour, salt, yeast, and cheese together.

  • Rub in the margarine and beat in the eggs to form a dough.

  • Knead the dough for ten minutes, and then leave to prove for about an hour.
  • Pre-heat oven to 220 & #3872 ;C/ 200 & #3872 ;C fan/400 & #3872 ;F/6 Gas.

  • Put the dough in a terracotta flower pot, and glaze the top with some of the left over egg white.

  • Bake in the oven.
