Easy and Healthy Lunch Snack
I originally got this idea from a diabetic magazine, however I have altered it to suit me - it does have cheese in it, but I have replaced bread or crackers with slices of cucumber instead.
Very easy and tasted delicious, and you could vary the toppings.
Preparation Time: 5 minutes
Cooking Time: no cooking required
Serves: 1
Ingredients
½ Continental cucumber
Squeeze of sriracha hot sauce
Cheese
Goats cheese (optional)
Sliced olives
Method
Chop as many slices of cucumber as you would like to eat - I did about 12 slices - not too thin.
Cut to about this thickness
I also melted the cheese first, but this is optional and to do this, put pieces into a dry frypan and cook till it starts to melt and go brown.
I had some goats cheese so also used this, however you could use any cheese.
Put the cheese on each slice of cucumber, and top with a small dash of the sriracha sauce (it is very hot), olives, and/or parsley or anything else!
These would also have been nice with some hummus under the cheese....there could be many variations on these, and they are healthy, and low in fat especially if you use goat's cheese, and are great for those who do not eat bread.
