Easy Apricot Custard Tarts

A warm, fruity and creamy tart to devour on a chilly winter's night.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 4 servings

Ingredients
450g can apricot halves
2 sheets reduced-fat puff pastry, partially thawed
1/3 cup custard
1 egg white
1 tablespoon raw sugar

Method
  • Preheat the oven to 200 degrees C. Lightly grease 4 ceramic ramekins.

  • Slice the pastry sheets in half. Line each ramekin with one half each sheet. Bake these for 5-10 minutes, or until light golden brown and puffy.



  • While waiting, drain the apricot halves. Remove any excess liquid by further draining the apricots on paper towel.

  • When ready, carefully remove the ramekins from the oven.

  • Fill each ramekin half way with custard.



  • Top each with apricots.



  • Sprinkle sugar over the apricots. Coat the visible pastry shell with a brush of egg white.



  • Bake for a further 5-10 minutes.

  • Serve immediately, with a dollop of ice cream or whipped cream on top.
