Easy Banana Bread

A delicious, easy banana bread recipe for any occasion. Perfect served hot with butter.

Freshly buttered banana bread

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 10

Margarine or soft butter to grease
1 3/4 cups self-raising flour
1/4 cup plain flour
2/3 cup firmly packed brown sugar
1 tsp ground cinnamon
1/2 cup skim milk
2 eggs, lightly whisked (or equivalent No Egg)
50g butter, melted, cooled
2 overripe bananas, mashed

Freshly buttered banana bread

Preheat oven to 180 degrees.
Grease loaf tin with margarine or butter.
Combine flours, cinnamon and sugar in a large bowl.

Make a well in the centre

Freshly buttered banana bread

Mash the bananas with a fork and place in a separate bowl with milk, eggs and melted butter. Stir well to combine.
Add banana mixture to the flour mixture and stir until just combined.
Spoon mixture into pan and smooth the surface.
Bake in oven for 45 minutes or until a skewer inserted into the centre comes out clean.
Remove from oven and leave in pan to cool for 5 minutes.
Turn out onto wire rack to cool.

Served sliced by itself, with margarine or butter or toast first then butter.
