Want to enjoy banana bread, but don't like the Cafe Style pricing? Well, this simple and easy recipe could be the answer to your morning-tea sugar craving. I've been using it for years with high levels of success.
Ingredients 185g of unsalted butter
1 cup (175g) of brown sugar
1/2 cup (110g) of caster sugar
2 cups (300g) of Self-rising Flour, sifted
1/2 teaspoon of baking powder, sifted
1/2 teaspoon of ground cinnamon, sifted
3 small bananas, mashed
Preheat the oven to 170 degrees (fan-forced)
Place butter, sugars, and eggs in the bowl of a food processor and process until well combined.
Add flour, baking powder, cinnamon, and bananas. Process until smooth.
Spoon into a lightly greased 20cm x 10cm (1.75-litre capacity) loaf tin lined with non-stick baking paper
Bake for 65-70 minutes or until cooked when tested with a skewer
