Easy Beef StirFry
This beef stir fry is a winning family dish. It's super quick to throw together, delicious and nutritious. The use of frying steak makes it very affordable. Note that this can be enjoyed with or without rice.

Serves: 4
Ingredients
2 tbsp oil
2 tsp cornflour
450 g frying steak, cut into 1 cm thick slices
60g cashew nuts
3 garlic cloves
1 red onion
1 thumb-sized piece fresh ginger
6 pieces of baby corn
1 pak choi
1 head broccoli
½ vegetable stock cube
2 tbsp soy sauce
2 tbsp oyster sauce
1 small bunch coriander
Freshly ground black pepper
Method
Prepare your veg: cut the broccoli into florets and slice the stalk into strips
Cut the baby corn down the middle in half
Thinly slice the onions and garlic
Wash and separate the pak choi
Peel and grate the ginger
Heat a wok over a high heat until hot
Add 1tbsp oil and add the beef when it starts to smoke
Sprinkle 1 tsp of the cornflour onto the beer and stir-fry until browned all over.
Remove beef from the pan and set to one side.
Now turn down the heat and toast the cashews in the same pan that you used for the beef in the juices until they start to turn a golden brown
Set the cashews aside and clean the wok.
Bring to a high heat once again then add the remaining oil.
Add the red onion and fry for 1–2 minutes, until just soft.
Next, add the garlic and ginger and fry for a minute then add the broccoli, pak choi and baby corn, soy and oyster sauce and mix well.
Mix the vegetable stock cube with 400ml boiling water and add it to the pan.
Bring to the boil, stirring well.
Cover with a lid and cook for 2 minutes or until the broccoli is just tender
Add the beef and cashews, stir through the sauce and heat for a minute or two
Cover for another minute
Take all the ingredients out with a slotted spoon and put them in one big serving bowl
Mix 1 tsp cornflour with a little bit of warm water in a cup, then add to the remaining sauce and simmer for 1 minute so that it thickens up
Once sauce is thick, pour it over ingredients in serving bowl
Roughly chop a handful of fresh coriander and sprinkle over and season with freshly ground black pepper to serve.
