Easy Blueberry Pancakes

This is the easiest recipe for pancakes - using a cup to both measure the pancakes and pour them into the pan is so handy. The blueberries taste like little pops of jam. They are a perfect quick breakfast.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 6 servings

Ingredients
1 egg
1 cup self-raising flour (if you don't have self-raising, add 1 tsp of baking powder)
1 cup milk (semi-skimmed is my preference, but full fat would be fine too)
200g (1 punnet) of blueberries
1 tbsp oil
Pinch of salt

Method
  • Crack the egg into a large mixing bowl



  • Add the flour (and baking powder if using plain flour) and a pinch of salt




  • Add the milk to the flour and egg



  • Whisk well until you have a smooth batter with no lumps



  • Add the blueberries to the batter and fold them in gently



  • Heat the oil in a small frying pan



  • Using the cup, measure pancakes into the pan and cook until golden on both sides.



  • Variations: If you don't use blueberries, it's easier to make a smoother, rounder pancake. Then you can add fruit afterwards. This morning we had kiwi fruit, which was delicious.
