Easy Caramel Fudge

You can't really go past a good caramel fudge. This recipe uses white chocolate and condensed milk to make a caramel fudge with a delicious taste and a great texture.



It makes a great gift, but you can also keep it all to yourself as a special treat.

Preparation Time: 10 minutes
Cooking Time: 15 minutes (plus around 6 hours to set)
Makes: 49-64 squares

Ingredients
1 can condensed milk
1 cup brown sugar
2 tablespoons glucose syrup
1/4 cup golden syrup
125g butter, chopped
180g white chocolate

Method
  • Line a 20cm square baking tin with baking paper.

  • Finely chop the white chocolate and set aside.

  • Combine all ingredients (except white chocolate) in a saucepan. Stir the mixture until all the sugar has disolved.



  • Continue stirring for about another 8 minutes, until the mixture starts to come away from the side of the pan. Take it off the heat, and stir in the chocolate.

  • Transfer the mix to a stand mixer (this step can be skipped if you don't own a stand mixer). Beat the mix as it cools down until it is nice and thick.



  • Spread the mix into the lined pan. Cover with cling wrap and leave in the fridge for several hours.

  • Remove the fudge from the fridge, and cut it into small squares.




  • Here are a few variations you could try

    Salted Caramel Fudge
    Just crack some sea salt over the fudge and press down after you transfer it to the pan.

    Chocolate Caramel Fudge
    Replace the 180g white chocolate with 200g of milk or dark chocolate.

    Nutty Fudge
    Add chopped walnuts to the mixture before beating.
