Easy Cheesy Corn and Bacon Muffins

are quick to make, taste delicious and make a great light lunch served with salad or can be added to your childs lunch box. This recipe can easily be doubled for larger quantities

Preparation Time: 15 minutes
Cooking Time: 20-25 minutes
Serves: 6

Ingredients
1 tsp Olive Oil
1 Small Onion Diced
1 Rasher Bacon Diced
1 Baby Capsicum Diced
125g Can Corn Kernels (drained)
1/2 Cups SR Flour
1/2 Cup Grated Cheese
2 Eggs
1/2 Cup Milk
25g Melted Butter


Method
  • Preheat oven to 190C/170C fan forced and line a 6 hole muffin pan with paper cases.
  • In a frying pan, heat oil then add onion, bacon, capsicum and corn. Cook for 5 minutes until onion is tender and bacon is slightly crisp. Cool
  • In a bowl add remaining ingredients and stir to combine. Add the cooled onion, bacon, capsicum and corn mixture and stir until combined.
  • Spoon mixture into paper cases and bake for 20-25 minutes until golden and an inserted skewer comes out clean. You can transfer to wire rack to cool or eat immediately
