Easy Chicken Noodle Stir Fry

Easy to make chicken stirfry with 2 minute noodles. Perfect for those evenings when you don't have the energy or inclination to cook anything complicated.



Preparation Time: 10 minutes
Cooking Time: 12-15 minutes
Makes: 3-4 servings



Ingredients
Olive Oil
500g chicken thigh fillets, cut into small pieces
1 Onion, chopped
1 Small Eggplant, chopped
2 Cloves Garlic, crushed
1 Packet 2 Minute Noodles
Soy Sauce



Method
  • Step1
  • Heat oil in frying pan.

  • Step 2
  • Add onion and garlic to the frying pan and cook for 2-3 minutes, until onion is soft

  • Step 3
  • Add chicken and eggplant and fry until chicken is brown, stirring occasionally





  • Step 4
  • Place 2 minute noodles in a bowl and cover with boiling water. Leave noodles for 2-3 minutes until softened



  • Step 5
  • When chicken is cooked, add 2 minute noodles into the pan (without the water). Stir noodles into the chicken/eggplant mixture



  • Step 6
  • Drizzle Soy Sauce over stir fry and mix well. Cook for another 1-2 minutes. Serve immediately.

    Note: You can substitute eggplant for other vegetables such as zucchini, bok choy or snow peas or use a combination of vegies.
