Quick, easy and cheap! Oh did I mention delicious?
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 3 servings
Ingredients
1 tablespoon peanut oil (or what ever oil you prefer to cook with)
1 chicken breast, diced
2 garlic cloves, finely chopped
1/2 cup sweet chilli sauce
2 tablespoons Kecap manis (sweet soy sauce)
2 cups mixed steamed veggies
200 grams hokkein noodles
Method
Dice the chicken breast into roughly 2cm cubes. Place in a bowl with the sweet chilli sauce, garlic and Kecap manis. Mix to cover the chicken. Set aside for up to 20 minutes while you prepare the rest of the ingredients.
Prepare the vegetable and steam in a microwave steamer for 5 minutes. I used beans, capsicum, carrots, broccoli and cauliflower. If you prefer to steam on the stove then do so until the vegetables are just tender
Heat the oil in the fry pan over medium heat. Add the marinated chicken, included the sauces. Cook until chicken is cooked through.
While the chicken is cooking prepare the noodles as per packet instructions.
When the chicken is cooked add the steamed vegetables and noodles.
You can use as many vegetables as you like. It could also be served with rice rather than the noodles. Experiment with the amount of each sauce you use to satisfy your own tastebuds.
