Easy Crispy Sweet Potato Chips

Easy to prepare, crunchy and moorish these crispy sweet potato chips are addictive. They have a sweet-salty taste and are a healthier alternative to packet chips. My family love them. Serve at parties or barbecues.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 1

Ingredients
1 Hawaiian sweet potato
2 tbsp olive oil
Salt and pepper
1/2 tsp cayenne pepper or paprika (optional)

Method
  • Preheat the oven to 175 degrees. Take out the wire racks and line with two sheets of baking paper.
  • Thinly slice the sweet potato using a food processor or knife. Aim for consistency so the slices are the same thickness.

  • Place the sweet potato into a plastic bag or bowl, add the olive oil, salt, pepper and cayenne pepper or paprika. Toss to combine until the slices are evenly coated.

  • Lay the sweet potato slices on the baking paper, spreading the slices so there is no overlap.

  • Put one rack with sweet potato in the top and the other at the bottom of the oven. Bake for 7 minutes.
  • Turn the sweet potato slices over and switch racks so the bottom rack goes on the top and the top rack goes on the bottom of the oven. Bake for 6-7 more minutes, until golden brown.
  • Cool and serve immediately.
