Easy Curried Salmon Flan

This turned out delicious - make sure you make the pastry thin however, and I threw a bit out as I always find savoury food tastes better with a thin "crust".

If you don't want to make your own pastry, use a Puff pastry.

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 2 - 3

Ingredients
For the pastry
1½ cups plain flour
Pinch of salt
125 g butter
1 egg yolk
1 tbsp lemon juice

For the filling
440 g can salmon
45 g butter
2 tbsp flour
1 tbsp curry powder
1½ cups milk
½ cup mayonnaise
2 tsp lemon juice
2 tbsp parsley, chopped
1 egg
70 g cheese, grated

Method
For the pastry
  • Line or grease a 23 cm flan tin or similar.

  • Sift the flour and salt into a bowl.

  • Add the chopped butter, and rub in with your fingers till it is like coarse breadcrumbs.

  • Add the egg yolk and lemon juice, and mix to make a dough.


  • Roll it out to fit the flan tin, and put in the fridge while you make the filling - or you could "blind" bake it for about 5 minutes.

  • For the filling
  • Preheat the oven to about 190°/170° fan forced.

  • Drain and flake the salmon, and arrange over the base of the pastry case.


  • Melt the butter in a pan, add the flour and curry powder, and stir until smooth.

  • Cook for a minute then remove from the heat and add the milk.

  • Stir until the mixture is smooth, and then add the mayonnaise.

  • Return to the heat, and stir until the sauce boils and thickens.

  • Add the lemon juice and parsley, reduce the heat, and simmer a minute.


  • Remove from the heat, add the beaten egg and cool slightly.

  • Pour this mixture into the flan case, and sprinkle with the grated cheese.


  • Bake for about 10 minutes, then reduce the heat to moderate, and cook a further 25 minutes or until the filling is set.

  • Cut into slices and serve.
