Easy Curried Salmon Flan
This turned out delicious - make sure you make the pastry thin however, and I threw a bit out as I always find savoury food tastes better with a thin "crust".
If you don't want to make your own pastry, use a Puff pastry.
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 2 - 3
Ingredients
For the pastry
1½ cups plain flour
Pinch of salt
125 g butter
1 egg yolk
1 tbsp lemon juice
For the filling
440 g can salmon
45 g butter
2 tbsp flour
1 tbsp curry powder
1½ cups milk
½ cup mayonnaise
2 tsp lemon juice
2 tbsp parsley, chopped
1 egg
70 g cheese, grated
Method
For the pastry
Line or grease a 23 cm flan tin or similar.
Sift the flour and salt into a bowl.
Add the chopped butter, and rub in with your fingers till it is like coarse breadcrumbs.
Add the egg yolk and lemon juice, and mix to make a dough.
Roll it out to fit the flan tin, and put in the fridge while you make the filling - or you could "blind" bake it for about 5 minutes.
For the filling
Preheat the oven to about 190°/170° fan forced.
Drain and flake the salmon, and arrange over the base of the pastry case.
Melt the butter in a pan, add the flour and curry powder, and stir until smooth.
Cook for a minute then remove from the heat and add the milk.
Stir until the mixture is smooth, and then add the mayonnaise.
Return to the heat, and stir until the sauce boils and thickens.
Add the lemon juice and parsley, reduce the heat, and simmer a minute.
Remove from the heat, add the beaten egg and cool slightly.
Pour this mixture into the flan case, and sprinkle with the grated cheese.
Bake for about 10 minutes, then reduce the heat to moderate, and cook a further 25 minutes or until the filling is set.
Cut into slices and serve.
