Easy Date And Sultana Muffins

I've been making this recipe for years and find it a quick and easy treat that the whole family loves. The ingredients are all easily sourced and very affordable, while the recipe itself is practically fool-proof. It's a great homemade snack for school or work lunch-boxes, or a simple desert to whip up quickly for unexpected visitors.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 12 - 15 servings

Ingredients
  • 150g butter
  • 1 cup of sugar
  • 2 medium bananas
  • 3 tablespoons of yoghurt
  • 1 x 400ml tin of coconut cream
  • 2 cups self-raising flour
  • 1 cup dried dates
  • Half cup of sultanas

  • Chop the butter into small pieces and blend with the sugar in a food processer.

  • Mash two medium bananas and add to the mixture in the blender, followed by three large tablespoons of plain yoghurt and the tin of coconut cream.

  • When the ingredients have completely blended, gradually start adding the self raising flour. Once all the flour has been added, the mixture can be transferred into a bowl. Gradually add some extra flour if the mixture is too runny.

  • Chop the dates into small pieces, and add them, along with the sultanas, to the mixture.

  • Grease a muffin tray and transfer the mixture into it.

  • Bake the muffins in an oven heated to 175 degrees celsius for approximately 20 minutes, or until they're lightly browned.
