Easy Eggplant Parmigiana

This recipe only requires four ingredients, is simple to make but totally delicious.



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
2 Eggplants, cut into 1cm thick slices
Olive or vegetable oil
400g Jar Tomato Pasta Sauce with Garlic
1/2 Cup Mozzarella or Pizza Cheese, shredded



Method
  • Preheat oven to 200 degrees C.

  • Cover base of frying pan with oil.

  • Heat frying pan on medium and cook eggplant in 2 batches - 2 to 3 minutes each side, until eggplant is golden.



  • Drain eggplant on paper towel.

  • Spread half the pasta sauce over the base of a baking dish.

  • Arrange eggplant on top of the sauce.



  • Season to taste.

  • Top with remaining pasta sauce and cheese.



  • Bake for 12-15 minutes until cheese melts.

  • Serve with crusty bread or fresh green salad.
