Easy Fish Cakes
This lighter version of the traditional fish cake does not use potato as a base. Using a fluffy, veggie packed fritter base and tinned tuna makes these fish cakes a simple, yet completely delicious, meal that you can fix for dinner or lunch in under 15 minutes.

Makes: 4-6 servings
Ingredients
1 cup corn kernels
1 tin tuna, drained
1 cup plain flour
1 teaspoon baking powder
2 eggs
ΒΌ cup milk
1 tablespoon minced garlic
1 small salad onion
2 shallots (green onions)
Pinch salt/ pepper (optional)
1 teaspoon chili flakes
1tablespoon rice bran oil
Method
Sift the flour, baking soda, salt and pepper into a large mixing bowl.
In a separate bowl, whisk together the eggs, milk, garlic and chili flakes. Slowly add to the flour and gently stir until just combined.
Finely dice the onion and shallots.

Add the drained tuna to a small bowl and use a fork to break up any chunks. Add the tuna to the batter.

Fold the onion, corn and minced garlic into the batter. Do not overmix.

Add the oil to a heavy bottom frying pan and heat pan until hot.
Add spoonfuls of the batter to the hot pan. Gently flatten the mixture to ensure even cooking.

Cook until golden brown, turn over and repeat on other side.
Variations-
Make mini versions to serve as cocktail food
Add capsicum, grated zucchini or carrot
Add frozen peas or chopped spinach
Add fresh herbs
