Easy Fish Cakes

This lighter version of the traditional fish cake does not use potato as a base. Using a fluffy, veggie packed fritter base and tinned tuna makes these fish cakes a simple, yet completely delicious, meal that you can fix for dinner or lunch in under 15 minutes.

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 4-6 servings

Ingredients
1 cup corn kernels
1 tin tuna, drained
1 cup plain flour
1 teaspoon baking powder
2 eggs
ΒΌ cup milk
1 tablespoon minced garlic
1 small salad onion
2 shallots (green onions)
Pinch salt/ pepper (optional)
1 teaspoon chili flakes
1tablespoon rice bran oil


Method
  • Sift the flour, baking soda, salt and pepper into a large mixing bowl.

  • In a separate bowl, whisk together the eggs, milk, garlic and chili flakes. Slowly add to the flour and gently stir until just combined.

  • Finely dice the onion and shallots.

  • Add the drained tuna to a small bowl and use a fork to break up any chunks. Add the tuna to the batter.

  • Fold the onion, corn and minced garlic into the batter. Do not overmix.

  • Add the oil to a heavy bottom frying pan and heat pan until hot.

  • Add spoonfuls of the batter to the hot pan. Gently flatten the mixture to ensure even cooking.

  • Cook until golden brown, turn over and repeat on other side.

  • Serve with fresh avocado, tomato and a squeeze of lemon. Or add fresh tomato salsa .

  • Variations-
  • Make mini versions to serve as cocktail food
  • Add capsicum, grated zucchini or carrot
  • Add frozen peas or chopped spinach
  • Add fresh herbs
