Ingredients 1/2 cup red onion chopped or sliced
1 cup Lebanese cucumber chopped in big pieces
2 cups mixed greens
1/4 cup kalamata olives
1/8 cup feta cheese crumbled
7-8 nos cherry tomatoes
Few strands fresh dill (optional)
For the salad dressing
2 tbsp extra virgin olive oil
2 tbsp lemon juice
1/4 tsp lemon zest
1 garlic clove crushed
1/4 tsp salt
1/4 tsp black pepper crushed
1/2 tsp dried oregano
Method To make the Greek salad dressing
To a small jar or bowl, add the ingredients listed under dressing. Give it a good shake/whisk.
To assemble the salad
Add a bed of mixed greens to the salad dish/bowl.
Top it up with the chopped onion, tomato, cucumber, olives.
Crumble the feta over it and fresh dill strands if using.
Add the dressing just before serving to prevent the salad from going soggy
This salad is a great option if you like to prepare salad jars in advance.
Just keep the greens separate so that they don't go soggy.
