Easy Home Made Strawberry Jam
Now that strawberries are in season and very cheap, this is an ideal time to buy them and make your own jam.
Home made jam also makes wonderful gifts with Christmas drawing near.
They last for ages (I still have one that is a year old) and are generally not as sweet as shop bought ones, as I add a bit of lemon juice.
This one is easy to make, and using the special sugar makes it failproof.
Special jam setta sugar
I normally make jam the longer way however this was a recipe on the side of the sugar pack so decided to try it.
Preparation Time: 20 minutes
Cooking Time: 7 - 10 minutes
Makes: 3 jars
Ingredients
500 g strawberries

1 tsp lemon juice
5 g butter
Method
Crush or cut the strawberries with a potato masher or blender
I cut them, but blending would be better
Put the strawberries and the sugar in a heavy based pot.
Put a small plate in the freezer -to test if jam is set later.
Slowly heat the mixture over a low heat until the sugar dissolves.
Do not allow to boil
Add the bit of butter and lemon and increase the heat to boiling. Bring to a full rolling boil.
Boil for 4 minutes only.
Remove from the heat, skim off any foam and put a bit on the plate that was in the freezer -if it sets it is done. Check by putting your finger in it and the surface should wrinkle if done.
Do not take jam off the boil until this has been achieved.
Sterilise jars -I use jars that have been washed in the dishwasher (have no residual odour), rinse out with water, shake excess water out, and microwave for about 2 minutes.
Put carefully into bottles. Gently wipe the top of the bottle to get any stickiness off.
Ready for lids
Seal bottles and allow to cool.
