Easy Low Fat Vanilla Chia Pudding

I needed a dessert that was low in calories and fat and decided on this one.

Easy to make, it requires no cooking and can be made in minutes.

You can add any nuts, berries or fruit and top with coconut flakes if desired.

Preparation Time: 10 minutes plus overnight
Cooking Time: 0 minutes
Serves: 1 large serving

Ingredients
¾ cup vanilla almond milk -unsweetened
¾ tbsp maple syrup
1 tsp pure vanilla extract
3 tbsp chia seeds
Nuts, fruit, berries, coconut - optional

Method
  • Using a glass container with a lid - I use old jam jars or similar -add the ingredients in the following order: Milk, maple syrup, vanilla and chia seeds.

  • Use bigger jars if you are going to add fruit.

  • Stir well and let sit for 10 minutes, and then stir well again - this will prevent lumps.


  • Refrigerate overnight.

  • When you are ready to eat it, stir it well and top with your favourite toppings.

  • I made two of these at the same time and the second one I topped with some figs.


  • Will keep for up to 5 days in the fridge.
