Easy Mango Sorbet

This recipe is perfect for a hot day where you can barely move! It is so simple to make and tastes amazing. The rice milk works perfectly with the mango. However it does tone down the sweetness a little bit, so if you have a sweet tooth just add in agave or another sweetener. Eating this will cool you down in an instant!



Preparation Time: 10 minutes, plus freezing
Makes: 4 servings

Ingredients
1/2L Rice Milk, frozen
1 Mango
1tbsp Lime
1tsp Agave, optional



Method
  • Freeze rice milk over night or for a few hours. Once frozen, chop into smaller sections that your processor can handle.



  • Place mango, rice milk and a squeeze of lime in a food processor and process until combined. At this stage it will look a bit sloppy.



  • Taste. If it is not sweet enough for your liking add in agave, coconut sugar or normal white sugar. I prefer agave as it has a mild taste and doesn't take away from the mango.

  • Pour into a bowl and set back in the freezer for one to three hours or until it is frozen to your liking. I like it still slightly sloppy.



  • Serve with mixed berries, a slice of lime or both.

  • Munch!
