Easy Meatballs In Tomato Sauce
When I lived in Brussels, I ate Boulettes Sauce Tomate at least once a week - it is a traditional Belgian dish, well known for its hearty flavour and on the menu of nearly every café and restaurant there! However when cooking my own version at home, I prefer to cheat a little with this very easy recipe. It saves time and effort but still produces a yummy and healthy meal.
Preparation Time: 2 minutes
Cooking Time: 1 hour hob; 4 hours slow cooker
Makes: 2 servings
Ingredients
400g meatballs
350g pasta sauce
400g chopped tomatoes
Handful of fresh basil and coriander leaves (optional)
Notes
I prefer using turkey meatballs, as they are lower in fat than other meat. However this recipe will work just as well with beef or pork meatballs, if you prefer.
A pasta sauce with vegetables in will add extra flavours and nutrition to the meal.
Method
Place pasta sauce and chopped tomatoes in a large pan. Mix well.
Add meatballs and ensure they are covered by the sauce.
Ingredients mixed
For hob cooking, simmer for 1 hour.
For slow cooking, cook on low for 4 hours.
Ready to serve
Serve in a bowl, garnished with fresh herbs if using.
Accompany with mashed potatoes, garlic bread, rice or chips.
