Easy Moist Date and Nut Honey Cake
This is another version of a honey cake which I find is very moist and not as sweet as an ordinary honey cake.
Using dates make this a delicious moist cake for any occasion. Dab a bit of cream over it for extra deliciousness!
Preparation Time: 15 minutes
Cooking Time: 55 minutes
Serves: 8 - 10
Ingredients
170 g dates (Medjool are best)
1 cup flour less 2 tbsp
2 tbsp corn flour
1 tsp baking powder
¾ tsp cinnamon
½ tsp salt
Pinch of nutmeg
¾ cup vegetable oil, or similar
Less than ½ cup brown sugar
¼ cup honey
2 eggs
1 tsp vanilla
½ cup chopped walnuts
Method
Preheat the oven to 160°/140° fan forced, and line about a 20 cm cake tin with baking paper or grease it - I used a springform
Put the dates whole in very hot water and let them soak while you make the rest of the cake.
Mix together the flour, corn flour, baking powder, cinnamon, salt and nutmeg.
In another smaller bowl, whisk together the oil, brown sugar, honey, eggs and the vanilla.
Pour these wet ingredients into the dry ingredients and stir till a thick batter forms.
Drain the water from the dates, pit them, and chop them into small chunks.
Put the walnuts and date chunks into the batter.
Put the batter into your tin and bake for about an hour.
Take out of the oven and put on a wire rack to cool.
