Ingredients 2 pkts chicken flavour 2 minute noodles
1 small zucchini, grated coarsley
1 small carrot, grated coarsley
2 spring onions, plus extra
4 egg or 5 if small
1 tbsp soy sauce
Chilli sauce to serve
Break up the noodle packets into four pieces each. Add the noodles to pan with boiling water and boil for 2 minutes.
Drain and return to pan. Stir in vegetables.
Beat the eggs, one sachet from the noodle packet and the soy sauce in a small bowl.
Either use oil or as I did, put some baking paper on the bottom of a frying pan (so it does not stick) and spread the noodle mixture evenly in the pan.
Pour over the egg mixture.
Cook, covered for about 12 minutes or until it is set.
Put a plate over the pan when it is cooled slightly and invert it so the noodle cake falls out.
Cut into slices and serve topped with extra spring onions.
